Soup

My sis, Molly, keeps telling me about this great soup she made up the other night, and I keep insisting that she send me the recipe since I tend to have "issues" in the kitchen, especially when a recipe isn't present. Or when boiling water. Here is what she finally emailed me today. This is my kind of recipe in a language I can totes understand!

Level of difficulty: So easy you can't mess it up


Spectacular Spinach Soup (or otherwise known as "The Triple S")

**Update** 16 oz Chicken Broth (while Mols wrote in 16 oz here, what she really means is a heck of a lot more. Try 48 oz. I used 32 of veggie broth and added some water, which worked out okay, too.)
2 heaping handfuls fresh spinach (more as you go is ok if you want to "feel out the sitch")
10-12 oz sliced fresh mushrooms
5 small grilled lean chicken breast - crumbled into soup after grilled
8 oz package of Spinach and ricotta tortellini

Optional suggestions:
A couple dashes or Oregano
Garlic salt
fresh sauteed garlic

Directions:
Mix all ingredients in pot. Bring to boil. Cool enough so you don't burn the crap out of your mouth and serve.
